The madeleine de Saint-Yrieix is as famous as the madeleine de Commercy. Rumor has it that its history is linked to the tradition of the pilgrimage to Santiago de Compostela, when a young girl named Madeleine offered pilgrims an egg cake made from a scallop shell. This is the origin of the characteristic shape of this soft, fragrant cake.
